I’m late! No, not that, I’m late in posting my weekly menu. But after last night’s disaster dinner, I’m glad to start with Tuesday. From time to time, we get chicken that’s been over-processed to the point where the meat is like rubber. Completely and absolutely disgusting. One bite and I spit the chicken out. It has nothing to do with the recipe or the cooking – it’s way too many injections to fatten the chicken to where it’s hardly discernible as being, well, chicken!

It’s almost like a crapshoot. Looking at the raw chicken, one can’t tell if it’s been overly processed and injected with hormones, etc. But if the chicken breast seems overly plump, chances are, it’s time to brine to make that chicken shine.

Mousse is one of those desserts that seems to have gotten lost along the way. It’s like pudding, only whipped, making it light and airy rather than smooth and creamy. So, tonight, we’re serving Espresso Balsamic Mocha Chocolate Mousse from Sonoma Farms.

Dessert is in! There’s nothing wrong with planning a special treat in your weekly menu plans. Even if you’re on a diet, moderation is key, and variety is the spice of life!

Tuesday

Tacos are so versatile! They can be simple to fix or require more effort. Today’s recipe, from Freutcake, requires a few more steps, but I think it’s well worth the effort.

The shrimp is coated with spices, seasoning, and cornstarch for flavor and crispness. The slaw filling includes sour cream, honey, and lime.

But that’s not all, these tacos are filled with fav toppings like avocado and pickled onions. For the finale, a drizzle of hot sauce-sour cream. And for tonight, these tacos are all we need for a complete meal!

Wednesday

This super-easy recipe for baked chicken from Jo Cooks will be delicious with the chicken first coated in mayo and then dredged in ranch dressing mix, bread crumbs, and Parmesan cheese. When baked, it creates a crispy coating on the outside and tender, juicy meat on the inside. Yum!

The scalloped potatoes recipe features tender layers of potatoes baked in a creamy sauce. Onions and fresh thyme add savory depth, and melty cheddar cheese takes it over the top! The perfect side dish from Love and Lemons.

Swordfish is probably one of my favorite fish with its dense texture and superb flavor. This recipe from Selenriver Press includes grilling the fish and serving it with a delicious strawberry-avocado salsa. Does it get any yummier?

I plan on serving the swordfish over a bed of steaming, fluffy rice for presentation, allowing the fish to be the star of the show!

For freshness, it’s got to be broccoli, something simple, delicious, and nutritious. Add some seasoning and a bit of butter, and that’s all that’s needed.

It’s time for pizza. And not just any pizza…tonight, it’s more about layering thin slices of zucchini over a lemon pesto on puff pastry crust. This recipe from Crumb Blog includes lemony feta cheese, freshly shredded Parmesan, and basil chiffonade.

I’m pairing the pizza with marinated sliced tomatoes for color and flavor. Lemon, zucchini, hello tomato! Olive oil, balsamic vinegar, garlic, a bit of sugar, seasoning, and basil will make these tomato slices sit up and sing!

This comfort-food meal resembles Hamburger Helper, except that we can control the ingredients. Ground beef, pasta shells, taco seasoning (homemade for me), salsa, cheddar cheese – it doesn’t get any better. Thank you to Dinner Then Dessert for a fun recipe!

Tonight, we’re serving this dish with crumbled tortilla chips for a bit of crunch, without the entire dish getting soggy.

To complement this homestyle comfort meal, a classic pea salad is in order. A mayonnaise-sour cream base incorporates sweet peas, red onion, crisp bacon, and cheddar cheese for a hearty and delicious salad from The Recipe Critic.

Sunday

Sometimes, all that’s needed is a simple and easy meal. This recipe, originally from Saving Dinner, will be perfect for a busy day. The fish is marinated in olive oil, lime juice, cilantro, and garlic for approximately 30 minutes. Season, and then grill for an easy, no-fuss dinner.

Broccoli is one of those vegetables that is versatile. Not only can it be prepared in a variety of ways, but it also makes a great salad. Tonight, it’s paired with cranberries, crisp bacon, red onion, sunflower seeds, and goat cheese, a recipe from Skinny Taste.

With the other puff pastry, a lovely apple tart will be the perfect after-dinner sweet treat. Cinnamon-sugar is sprinkled over the dough, then it’s layered with thin slices of apple and finished off with a bit more cinnamon-sugar. We plan to serve this apple tart drizzled with caramel sauce – a recipe from How Sweet Eats.
