Weekly Menu 3-6-26

It’s going to be an exciting week, with St. Patrick’s Day tomorrow. Our plans include serving up Irish cheese soup in bread bowls. Yum! And of course, some scrumptious cupcakes for dessert that include whiskey, Bailey’s Irish Cream, and stout. It’s covered, Irish-style!
I’m working against the clock today since there is a HUGE thunderstorm headed our way, so I’m cutting it short. Enjoy!
Dessert First

These tender chocolate cupcakes are made from scratch with batter spiked with Guinness, and the chocolate ganache filling includes a hint of Jameson Irish whiskey. Then frosted with a silky, smooth Baileys buttercream frosting!! What’s not to love here? I’m all in, and they’ll be perfect for St. Paddy’s.

Monday
Delicious Cajun Rice and Sausage Skillet is an easy-to-make one-pan dish with sausage, veggies, and rice. The mix has an incredible Cajun seasoning blend to add that something special for a complete meal that’s on the table in just 30 minutes! That makes me happy; thank you, Alyssa, from The Recipe Critic.
This one-pan skillet dinner doesn’t need anything else, except maybe some corn muffins. I’m taking a shortcut, though, and using a box mix.

Tuesday
Happy St. Paddy’s! We’re serving up soup in bread bowls. Having made this recipe before, I can attest it’s so good you’ll remember this soup for years to come. It’s a very filling soup, so a little goes a long way. It’s made with onion, garlic, lager, broth, Irish cheese, and cream cheese for a hearty and delicious soup from A Spicy Perspective.
This soup is taken to a whole new level when served in gorgeous glazed bread bowls with a sweet wheaty flavor. They’re homemade – another great recipe from A Spicy Perspective!

Wednesday
Aside from the fact that this chicken looks so good that I could eat the photo, it sounds delicious. The chicken is marinated in olive oil, soy sauce, lime juice, garlic, and seasoning before grilling. It’s served with a drizzle of green sauce made from peppers, cilantro, garlic, mayo, yogurt, lime juice, and other ingredients; a recipe from Platings and Pairings.
Letting the chicken star in this meal, it will be served over fluffy white rice and dusted with lime zest.
Brian’s Pepper Dish will be the perfect accompaniment for the chicken. A recipe given by a second cousin that I replicated from his description for how to make it. It’s so good and is a great side dish for most meals. A bit of tang comes from the vinegar and freshness from the basil chiffonade. The recipe is right here on Hearth and Quill.

Thursday
This fish, peppers, garlic, and lemon are seasoned and grilled until the fish is cooked through and the vegetables are tender and charred. A Harissa sauce is created from pureeing the vegetables in a blender, creating a bed for the grilled fish to rest on. In our case, we’re cooking mahi-mahi, drizzled with the grilled lemon. It’s pure perfection from Epicurious.
This coleslaw is a fresh and crunchy salad from A Farm Girl Dabbles with a light, zingy flavor, thanks to the creamy sour cream and mayo dressing. It will go perfectly with the fish, adding just the right amount of crispy, fresh flavor.
For a touch of sweetness, fresh caramelized grilled pineapple – it’s so good from The Recipe Critic, that you could almost say, it’s dessert!

Friday
It’s downright unimaginable not to like pizza, in any form! Tonight, puff pastry is topped with pesto, beefsteak tomato slices with fresh mozzarella or fontina before baking. When baked, drizzle with extra pesto, balsamic glaze, Parmesan cheese, and basil chiffonade! This recipe is courtesy of How Sweet Eats. I can’t wait!
To complement the pizza and add a touch of freshness, a simple garden salad dressed in Italian salad dressing. And dinner is served!

Saturday
With all the cooking going on this week, with delicious cupcakes no one could say no to, bread bowls for the Irish Cheese Soup for St. Patrick’s, and all the regular meals, I’m ready for someone else to do the cooking! It’s Subway time. Super sandwiches, and I get what I like, and hubby gets what he likes. It’s a win-win!
We’re not going to buy chips from Subway, though. We have chips at home – hubby likes the ruffled potato chips, and I like plain. And they pair so well with the sandwiches.
