Weekly Menu 9-1-2025

Happy Labor Day Weekend! I’m a bit late in posting today, but for good reason. I opted to start my fall decorating yesterday instead of working on the blog post. Yikes! I’ve grown tired of my summery-deco, and with a rainy day, dark, and overcast, it put me in the mood to pull out fall pillows and throws, change out the sweet summer flowers for fall foliage. I couldn’t seem to wait until the 2nd.
I hope to share our patio/backyard makeover while it’s still somewhat warm outside. So much to share, and often so little time. My Dad’s 101st birthday was on the 28th, and I have pics to share, and I want to share fall home pics, our recent four-day vaca, and so many other things! The list really does grow – and quickly too! Enough of that, let’s get to this week’s menu…
Monday
Happy Labor Day! Is it time for another barbecue – you bet! Tonight, from the Recipe Runner, we’re grilling chicken kabobs. The chicken is marinated in a mixture of tamari, chili garlic sauce, rice vinegar, honey, and lime juice. I plan on making extra marinade for the veggies, too. Then the chicken and fresh pineapple chunks are threaded onto skewers for grilling.
The best way to serve these fun kabobs is to top them and the veggies over fluffy rice that’s flavored with fresh chopped cilantro and lime juice.

Tuesday
I love easy weeknight casserole dishes, especially when they have great ingredients, like this pasta casserole from The Girl Who Ate Everything. We’re talk’n ingredients like garlic, chicken broth, heavy cream, cream cheese, Parmesan cheese, fresh spinach, and marinated artichoke hearts. In a word, yum!
The only thing that will complete this meal is a good side of garlic bread with all that buttery, garlicky goodness, and toasted just right!

Wednesday
This recipe has it all – tender cooked chicken, spinach, celery, carrot, onion, chicken broth, cream, and plenty of seasoning for a hearty soup. From On Sutton Place, I’m looking forward to fall, when soups are on the menu again with plenty of fresh ingredients that will flood the market, like brussels sprouts, winter squash, and cranberries – yum! Ladle all this soup goodness into pretty soup bowls and serve with fresh homemade rolls.

Thursday
This recipe calls my name. To me, it seems more like a date night recipe with the wide-ribboned noodles, Italian sausage, onions, bell peppers, garlic, tomatoes, and spices from The Cozy Apron. Serve in pretty pasta bowls, set the table, and enjoy a glass of your favorite wine with some music playing in the background. Oh my!
The only thing this dish needs is a fresh-from-the-oven, homemade baguette with a dipping oil to finish it off and sop up any juices that are left in the bottom of the bowl. However, if you’re thinking of a date night, consider serving a garden salad beforehand or an appetizer to set the mood.

Friday
I usually enjoy cooking on Friday evening, knowing I don’t often have commitments on Saturday morning. We can enjoy cooking together with a glass of wine in hand while listening to music playing in the background. Tonight’s dinner will be easy to prepare since the vegetable salad with basil vinaigrette from Two Peas & Their Pod was made earlier in the day.
While the fries crisp in the oven, we’ll cook the fish that’s seasoned in flour and Cajun seasoning in a little EVOO. After it’s cooked through, we’ll add a bit of butter, lemon juice, and garlic to the skillet and whisk up those flavorful pan drippings into the mix to pour back over the fish.

Saturday
We’re opting for a super-easy dinner for tonight straight from The Recipe Critic. This taco-rice casserole is all about comfort, quick, and easy to prepare. And presto, dinner is served! Serve this casserole with your favorite toppings, such as sour cream, shredded lettuce, avocado, and salsa or Pico de Gallo.
With all that, this is a meal in itself – maybe just warmed flour tortillas to help scoop up every last bite on the plate.
