Equipment

  • Air-fryer

Ingredients

  • 1 Bacon strip
  • 2/3 cup Shredded cabbage
  • 1/4 cup Finely shredded carrot
  • 1/2 tsp Minced fresh gingerroot
  • 1 Clove garlic, minced
  • Soy sauce to taste
  • 1 tbsp Scallion, thinly sliced
  • 1/4 tsp Sam Olek
  • 10 Wonton wrappers

Instructions

  • Cook bacon until browned and crisp.  Set aside on a paper towel.  Save rendered bacon drippings.
  • Sauté cabbage, carrot, and ginger in rendered bacon fat until soft – approximately 5-7 minutes.
  • Add garlic and cook for an additional minute, or until fragrant.
  • Add soy sauce and cook for another minute.
  • Add scallion and Sam Olek – mix well and set aside.
  • Set out a paper towel and a small bowl of water. While you work, keep the wrappers covered with a damp paper towel to keep them from drying out.  Work with one Wonton wrapper at a time.  Spoon a teaspoonful of filling into the center of the wonton wrapper.  Dip your finger into the bowl of water and slightly dampen the edges of the wrapper.  Pull opposite corners of the wrapper together over the filling, and pinch the edges together. Pull the last two opposing corners up to create a purse, pinching the edges together.
  • Spray the basket of an air fryer with cooking spray.  Place purses into the basket as they are made.  Once all 10 purses are completed, spray the tops with more cooking spray.
  • Position the basket in the air-fryer and set the temperature control to 375 degrees Fahrenheit, and set the timer for 6 minutes.
  • Turn wontons out onto a paper towel-lined plate.  Enjoy with heated peach-Habanero jelly or sweet-n-sour sauce.
